A Thai curry dish is made from curry paste, seafood, vegetables or fruit, meat, herbs, and coconut milk or water. Thai curries have great distinction with Indian curries in their use of ingredients such as herbs and aromatic leaves over a mix of spices.

It is a must to use curry paste for Thai curries. Thai curry paste use common ingredients such as shrimp paste, red  or green and dried or fresh chilies, depending on the kind of curry, onion or shallots, garlic, lemongrass, galangal and coriander / cilantro root.

Some additional ingredients for the curry paste such as turmeric, peppers, coriander seeds, and boiled fermented fish are used depending on the type of curry. These ingredients are traditionally ground with a pestle and a mortar.

Thai curries use many main ingredients such as meat and fish, tree leaves, flowers and vegetables like eggplant, squash, and pumpkins. These ingredients were decided by regional and seasonal availability.

Some additional ingredients such as fresh kaffir lime leaves, fingerroot, and fresh herbs are commonly added to Thai curries. Kaffir lime leaves are commonly cooked along with the other ingredients, but the fresh herbs such as basil are almost always added at the last moment to make the full taste last longer and serve as a contrasting note to the flavors of a curry.

Some Thai Curries are already well-known in the West such as Kaeng Kari or known as Yellow curry, Kaeng Khiao Wan known as Green curry and Kaeng Phet known as the red curry or spicy curry.  There are some other popular curries such as Kaeng Pa known as Jungle curry and Kaeng som known as Sour curry.
