The Meeting

One evening at an event, this tall, dark, and handsome man came and sat directly across from me. We exchanged glances, but we didn’t speak. There was an instant connection that both of us felt and I remember it like it was just yesterday.

Later that evening I ran into him again, but this time we spoke. He was charismatic, outgoing, and full of life, I on the other hand was shy, introverted, and reserved. It was a whirlwind romance in the making and we were inseparable for most of the conference.

The Issue

After the 3 day event was over, our connection was obvious, but we both had reservations about the distance. He was from Orange County, California, and I was from New Jersey. I didn’t know how I was going to pull off a long distance relationship when I needed to get permission from my mom to do ANYTHING at that time!

Once I returned home to NJ, I told my closest friends about him and we already started imagining the wedding and my life in Laguna Beach with him. By this point you may be wondering why Laguna Beach? Well, back then I was obsessed with the MTV reality show Laguna Beach: The Real Orange County. Clearly, I jumped the gun there even though we never really even dated.

Distance and timing kept us from moving forward at that time. My life took a completely different turn… but fate and love would lead me back to him exactly 10 years later.

How we ended up together is beyond anything I ever imagined. How things turned out the way they did puzzle me to this day. How to make Honey Glazed Ginger Garlic Salmon step by step?

  1. Preheat oven to 400 degrees. Wash the salmon and pat dry. Place the salmon on a foiled tray.
  2. For the marinade, in a bowl combine the lite soy sauce, hoisin sauce, honey, sesame oil, siracha, vinegar, and lime juice. Stir well.
  3. Grate the ginger and chop the garlic.
  4. Add the ginger and garlic to the marinade.
  5. Top the salmon with 2 spoonfuls of the marinade like so.
  6. Place the salmon into the oven for 19-20 minutes until the salmon is no longer red inside, but rather pink.
  7. In the meantime chop the scallions and set aside for garnish.
  8. Once the salmon is done, garnish with scallions and serve immediately with brown rice or quinoa, and a side of vegetables.

Ingredients

  • 1 pound fresh salmon
  • 2 inch piece of ginger grated
  • 6 cloves of garlic chopped
  • 1 tbsp honey
  • 1 ½ tbsp lite soy sauce preferably gluten-free
  • One tsp pure sesame oil
  • 1/2 tbsp hoisin sauce preferably gluten-free
  • 1 tbsp siracha
  • 1 tbsp vinegar or rice vinegar
  • juice of ½ a lime
  • 2-3 stalks of scallions chopped

Notes

* Vegans/Vegetarians – instead of salmon, you can use this marinade in tofu and veggies. Bake or saute them.
