France is famous for its pastry and cakes. Besides the popular Cheese Puffs, you also need to know and try out the tasty, little almond cake called Financier with its complex taste but only need several ingredients. Financier is buttery, sweet and yummy with sponge cake texture that in no time you will love and enjoy it.

WHATDO YOU HAVE TO DO TO MAKE YOUR OWN AND THE BEST FINANCIER AT HOME?

As mentioned earlier, you just need to have several ingredients such as egg whites, sugar, almond flour, melted butter, vanilla extract and all purpose flour. Now that you already have the ingredients, let’s make the Financier or sponge almond cake.

First of all, the egg whites are beaten and the sugar is mixed until they become frothy or bubbly. And then, the flour is added and they are slowly stirred in the melted butter and vanilla extract. Next, the batter is removed to a financier mold and it is baked in less than 20 minutes. Finally, your homemade Financier is ready and you can enjoy it for your dessert.

For the financier mold, there are two kinds of financier mold. One is the traditional, rectangle gold bar with individual unit or a pan and the other one is a mini silicone financier mold that you can buy at Amazon.

One soft and tasty French Cake that goes well with Financier is French Yogurt Cake. For this soft and delicious French Cake, you need to have the ingredients such as 4 oz of blackberries, 4 oz of raspberries, 1 tablespoon of lemon juice, 1 tablespoon of sugar, and powdered sugar for dusting the cake. These ingredients are for the Berries.

Some other ingredients such as ¾ cup of Greek plain yogurt, 3 big eggs, ¾ cups of sugar, 1 teaspoon of vanilla extract, 1 ½ cups of all-purpose flour, 2 ½ teaspoons of baking powder, ½ teaspoon of salt, and ½ cup of extra virgin olive oil are needed for the Cake Batter.  Now, let’s make the French Yogurt Cake.

First of all, prepare a medium bowl. And then, the blackberries, raspberries, lemon juice and sugar are mixed in the medium bowl and they are stirred carefully and slowly, not to mash up the berries but just thinly coat or cover them. They are covered and placed in the refrigerator.

Secondly, prepare the oven. And then, the oven is preheated to 35 F or 175 C and grease a 9 inch or 23 cm long spring form pan.

After that, prepare a medium mixing bowl. The yogurt, eggs, sugar and vanilla are whisked together in the medium mixing bowl. The flour, baking powder, and salt are added and they are stirred until they are mixed properly. A spatula is used to fold in the oil until you only have a batter that is shiny and thick.

Next, the batter is poured into the prepared pan and it is baked for 35-40 minutes or until you insert a toothpick into the center of the cake which comes out cleaned. The cake is allowed to cool for 10 minutes before the cake is removed from the pan.

Finally, Your Homemade French Yogurt Cake is almost ready, but before you serve the cake, with powdered sugar, thinly or lightly the top is dusted and the berries are mounded at the top of the cake. INGREDIENTS :

  • 30 gram or 1.06 oz of all-purpose flour
  • 30 gram or 1.06 oz of almond flour
  • 2 of egg whites
  • 50 gram or 1.7 oz of butter
  • 80 gram or 2.8 oz of powdered sugar
  • ½ teaspoon of vanilla extract
  • Some slices of almonds

INSTRUCTIONS :

  1. Almond flour and all-purpose flour are mixed together by using an electronic hand mixer or a stand mixer.
  2. The egg whites and powdered sugar are beaten until it becomes snowy or until soft peaks are formed.
  3. The flour mixture is slowly and carefully integrated. The butter and vanilla extract are added slowly until the batter turns into smooth. Make sure that you do not over mix.
  4. The batter is removed into a piping bag or a plastic bag with one edges snipped off. The batter is added into financier mold. Every financier cake is topped with several slices of almonds. And then, it is baked at 220 C for more or less 12 minutes.
  5. After the financiers are let cool for 15 minutes, the financiers are removed from the mold.
